Saudi Arabian Jareesh Recipe

Ingredients:

  • 1 cup Jareesh (crushed wheat)
  • 500 grams lamb or chicken, cut into small pieces
  • 1 onion, finely chopped
  • 4 cloves of garlic, minced
  • 1 teaspoon turmeric powder
  • 1 teaspoon ground cumin
  • 1 teaspoon black pepper
  • Salt to taste
  • 4 tablespoons olive oil
  • 4 cups of water (or as needed)
  • Fresh parsley for garnish

Instructions:

  1. Soak the Jareesh: Rinse the Jareesh under cold water, then soak it in a bowl of water for at least 2 hours or overnight if possible. This step is crucial as it softens the Jareesh and helps it to cook faster.
  2. Cook the Meat: Heat the olive oil in a large pot over medium heat. Add the chopped onions and garlic, and sauté until they are golden brown. Add the meat pieces, turmeric, cumin, black pepper, and salt. Cook until the meat is browned on all sides.
  3. Add the Jareesh: Drain the Jareesh and add it to the pot. Stir well to ensure the Jareesh is well-coated with the spices and the meat mixture.
  4. Simmer the Stew: Add enough water to fully cover the Jareesh and meat. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer. Cook for about 1-2 hours, stirring occasionally, until the Jareesh is tender and has a porridge-like consistency. Add more water if needed during cooking.
  5. Serve the Jareesh: Once cooked, adjust the seasoning if necessary, then ladle the Jareesh into serving bowls. Garnish with fresh parsley and serve hot.
